Today’s Lesson On the Topic of Whole Wheat Homemade Bread
By admin | September 3, 2010
This being the Middle East, one of the most common breads is also one of the oldest and on the list of simplest breads around. Of course I am talking about the ubiquitous pita bread which surrounds almost everything here from the equally ubiquitous felafel, to hummous and tehina, and grilled meats of several forms. Add to that all the great salads (sometimes termed mezze in Arabic or is it Greek?) and you see what I mean. They’re everywhere and wrapping everything. Pita, with some variations, is local peasant’s bread in every single country on the Middle East. In some countries, like Turkey for instance, about 1 third with the flour is commonly whole wheat. In other countries, like some North African nations the pita is genuinely a flat bread. Sort of like a soft, slightly fluffy tortilla. In Israel this flat bread is termed a laffa. Except in Jerusalem where it really is known as locally, aish tanur literally ‘fire inside oven’. It is delicious everywhere.
